Once Upon a Time Recipes

 
Well, tomorrow is my birthday. An so I thought I'd share with you, my favorite pie recipe.  I love Lemon Meringue Pie!  I first learned to bake it when I was in 6th grade.  I was a challenge and one of those things I accomplished for which I am proud.  I remember how pleased Mom was with it.  And I especially remember how much Daddy liked it.  So without further adieu...



Lemon Meringue Pie


1 1/2 cups sugar
3 tablespoons cornstarch
3 tablespoons all-purpose flour
Dash salt
1 1/2 cups hot water
       * * *

3 slightly beaten egg yolks
2 tablespoons butter or margarine
1/2 teaspoon grated lemon peel
1/2 cup lemon juice
1 9-inch baked pastry shell cooled

Meringue (recipe to follow)


In sauce pan, mix 1 1/2 cups sugar, cornstarch, flour and salt.  Gradually add hot water, stirring constantly.  Cook and stir over high heat till mixture comes to boiling.  Reduce heat; cook and stir 2 minutes.  Remove from heat.

Stir small amount hot mixture into egg yolks, then return to hot mixture.  Bring to boiling and cook 2 minutes, stirring constantly.  Add butter and lemon peel.  Slowly add lemon juice, mixing well.  Pour into pastry shell.  Spread meringue over filling; seal to edge.  Bake at 350 degrees for 12 to 15 minutes.  Cool before serving.

Meringue

3 egg whites
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
6 tablespoons sugar

Beat egg whites with vanilla and cream of tartar till soft peaks form. Gradually add sugar, beating until stiff and glossy peaks from and all sugar is dissolved.  Spread meringue over hot filling.  Continue as above.

Note:  I use ready made pie crust in follow directions for baking on the package.

Maybe the reason I love this tasty pie so much is because it was my 1st attempt at baking and it was such a resounding success.


Humorous story about me and lemon meringue pie.  We had traveled from Indiana to Colorado  to visit family on our summer vacation.  It's a good two day trip and the kids were always such troopers, especially through the heat of Kansas.  When we got to Dad and Mom's house we were all pretty hot and tired.  Mom and Dad greeted us and we all unpacked the car and began to settle in.  I went to the kitchen to help with dinner and noticed two lemon meringue pies on the stove cooling.

"Wow," I said, "two pies."

Mom smiled and said, "Yes, one for us and the other for you!"

Best Cranberry Nut Bread Ever!!

Fresh from the oven!!!


I love ...nut breads, banana nut bread, pumpkin nut bread, apple nut spice bread, but my favorite ...nut bread is cranberry nut bread. The best recipe I have found is on the bag of FRESH cranberries by Ocean Spray! If you lived near me I would make you a loaf for your holiday morning breakfast.

But since I don't, here is the recipe. Of course if you buy a bag of Ocean Spray fresh cranberries it's on the bag.

Cranberry Nut Bread

2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
2 tablespoons of shortening
1 tablespoon of grated orange peel
1 egg, beaten
1 1/2 cups cranberries, coarsely chopped
1/2 cup chopped nuts

Preheat oven to 350 degrees F. Grease a 9 x5 loaf pan. Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, shortening, orange peel and egg. Mix until well beaten. Stir in cranberries and nuts. Spread evenly in loaf pan. Bake for 55 minutes or until wooden toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes, Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf.

Angel Food Cake From Heaven

Juliene sent this to me. A reflection in what it means to allow God to work in our lives. As she put it, food for thought.

Sometimes we wonder, 'What did I do to deserve this?' or 'Why did God have to do this to me?' Here is a wonderful explanation!

A daughter is telling her mother how everything is going wrong: she's failing algebra; her boyfriend broke up with her and her best friend is moving away.

Meanwhile, her Mother is baking a cake and asks her daughter if she would like a snack, and the daughter says, 'Absolutely, Mom, I love
your cake.'

'Here, have some cooking oil,' her Mother offers. 'Yuck,' says her daughter.

'How about a couple raw eggs?' 'Gross, Mom!'

'Would you like some flour then? Or maybe baking soda?'

'Mom, those are all yucky!'

To which the mother replies: 'Yes, all those things seem bad by themselves. But when they are put together in the right way, they make a wonderfully delicious cake!

God works the same way. Many times we wonder why He would let us go through such bad and difficult times. But God knows that when He puts these things all in His order, they always work for good! We just have to trust Him and, eventually, they will all make something wonderful!

God is crazy about you. He sends you flowers every spring and a sunrise every morning.

Whenever you want to talk, He'll listen. He can live anywhere in the universe, and He chose your heart.

Baking Wednesday...

There are two scrumptious recipes I am going to make today after I get home from work at noon...I've begun baking on Wednesday! I like to bake and so this is one day when I usually don't have any conflicts. Well, except for my visit with Sister Dorothy on the 1st Wednesday of each month about my travels on the "Road to Providence."

At any rate, here are two recipes I would like to share with you. The first comes from Father Schipp via my dear friend Karen. When he participates on a Cursillo team everyone anticipates this wonderful delight.

Peach Crunch Cake

PREHEAT Oven to 350 degrees. Spray 9x11 dish with Pam. Pour in two regular cans of peach pie filling, covering the bottom of the dish. Coverthe peach pie filling with one box of yellow cake mix. Cut into slices 1 1/2 sticks of butter and place over top of cake mix, sprinkle with cinnamon.

Bake for 45 minutes and serve warm with ice cream. A perfect and easy desert.

The next comes from Cuisine Kathleen. The best Irish Soda Bread I've tasted and so easy to make!

Irish Soda Bread....Kathleen


4 C flour
1 t salt
4 t baking powder
1 t baking soda
3/4 C sugar
2 t caraway seed
1 C raisins
1 egg
1 t vanilla
2 C buttermilk
1/4 stick of soft butter

Sift dry ingredients. Mix in the seeds and raisins. Add buttermilk and vanilla and mix.

Add beaten eggs and soft butter, mix

Put into 2 greased loaf pans, or 1 10 in round. Slit the top with a knife.

Bake at 350 about 30 to 35 for loaf pans, 50 for round.
Brush with butter or milk 10 min before removing from oven.
Check center to see if done, do no over bake..
